Noodle and Pasta



Today i’d like to share you about noodle and pasta. Noodle is a thin and long dough that is rolled and cooked with the boiled water. Noodle is invented by Chinese people about 4000years ago. From China, then people spread to the South East of Asia. For Chinese people, noodle is the symbolize of long life. Original shape of noodle is like a sheet, then first noodle machine invented in around years 700th.
There are three shapes of noodle, dry noodle, wet noodle and instant noodle. Many food that are made from noodle: kwetiau (made from rice flour), Ramen (from Japan), Pundong noodle, Wai Wai, Dangmyeon (people known it as  Soun noodle) , Soba, La Mien, Udon(from Japan), Mee pok, Mie pho (from Vietnam), etc.

This is how people made La mien. The more you strecth, the more delicious it was.

Garam Masala

Do you ever heard about Garam Masala before? Here's some explanation about Garam Masala.

Garam Masala (Garam= hot; Masala= mixture) is came from India. Garam Masala is spices for cooking. People in India usually add Garam Masala in the middle of cooking as their seasoning ingredients to create a rich flavour, tempting smell and beautiful color.
India has 2 climates. People in the North India are prefer to eat spicy food. Opposite with South India, people are prefer to eat non spicy food because it's hot there.

There are many variants and compositions of Garamasala: white pepper, cloves, bay, java chili, cumin, cinnamon, cardamom, nutmeg, fuli, lawang flower and pekak flower.

There's some benefit of Garam Masala:
1. Good for health. This can increase your appetite and prevent colds.
2. Improve your brain fuction.
3. Warm your body.
4. Decrease cholesterol.

Every house in India have their own Garam Masala Recipe. Garam Masala is a very flexible spices, you can add or remove some of the spices that you like or don't like. It's totally up to you, all it needs to be called as Garam Masala is containing at least 6 spices.
The Classic Garam Masala: peppercorns, cloves, cinnamon, cumin, seeds and cardamom pods.

Onigiri

Do you ever imagine why does onigiri must be wrapped with nori? What's the real purpose? Find out the answer here in thisisculinary.blogspot.com!

Onigiri is the rice that is wrapped by nori. Why they use nori? To make a beautiful onigiri, you'll need a sticky rice such as Japanese rice. And so people wrap it with Nori so it won't be sticky in their hands when they eat onigiri. That is the real purpose they wrapped Onigiri with nori.

This food is came from Japan. There are 5 types of Onigiri, but unfortunately i miss 1 name. There are O-musubi, Rice ball, Nasi kapal Rijstbal and the last is the one i forgot. Onigiri can stand only for a night in the chiller and maximum 2 days in the freezer. But back in time, the soldiers usually bring Onigiri as their food during war. In that time Onigiri are filled with Ume (plum), so Onigiri can stand little bit longer.

History of Onigiri is believed came from the diary of Lady Murasaki. She is an important woman in Japan and wrote about a handful rice. The diary is found before people know about chopsticks, so it means the diary found very very long time ago. The origin name is Tanjiki, but as the time goes by it transforms to Onigiri.

There are 4 common shapes of Onigiri, Triangle, Tawara, Round and ball.
But today people people make many shapes of onigiri.

But not just the shape, today people made onigiri with variant of ingredients.  
Some people make onigiri from red rice and they named it Black Onigiri.

And some people are make grilled Onigiri.

The common filling of Onigiri are Okaka (tuna), Tuna Mayonnaise, Grilled Salmon, Umebosi, Konbu (seaweed) and Mentako.
There are 5 basic steps to make Onigiri:
1. Give your hand a pinch of salt then wet your hands.
2. Place some rice on your hand.
3. Fill with any filling you like.
4. Form it into a ball.
5. Wrap  it with nori.

And so the Onigiri become the famous food in Japan, many buyers ask for Onigiri so they invented an Onigiri Machine. It can make 1 onigiri in 3 seconds only!

Unique tools and Presentation

This time, I'll tell you about Unique Tools and Presentation. This is a topic that I heard today in class, so enjoy!


First of all, I was surprised by this tools, Tramonto Caviar Stair. It seems like a stairs, and every stairs has a kaviar on it, they are colorful and looks fantastic there!

Then we have Malayio, this is from India and kind of fla but you eating them with a ice cream stick like you were eating ice cream but in fact you are not! What an experience haha. Then we have Latte Print. It's not an ordinary latte. This latte presentation is totally awesome, the old style is they are made the picture by the foam but now they can print your picture on the top of the latte by a machine! Then we have coffee cup, it's a cup and glazed by sugar inside so when you fill it with coffee it won't melt. After you drink your coffee, you eat your cup. The Real Cookbook, it's made from the real pasta. This cookbook is edible. 


There are some things that I think isn't relevant about this topic. They are daikon, Poppin Coskin, Glowing Cotton, Milk Beer (Japan, Hokaido), Ice Ramen (Japan), Camel Turdukkan (Arab), Simit Bread (Turki), D.S. Resto (the waitress are dressed up like a nurse and feeding people by 'injection'), Chalpi Kebab (Afganistan and Pakistan), Ice Cream Roll (pour the liquid on the the -30degree sheet of steel, wait and see it transform to ice cream, then they roll out it)

Cuisine Worldwide

 Hello guys, this is my first post and today i'd like to share you about Cuisine Worldwide.


My first choice is America.
America famous cuisine are Hotdog, Clam Chowder, Smoke meet sandwich, Ribs, Egg benedict and Buffalo wing.

Clam Chowder is a street food, they use a bun for the bowl of the chowder.
Buffalo Wing is one of the famous food. When a sport competition begun, thay eat lots of. Buffalo Wing, so they named it Buffalo Wing Day (July, 29).

Then we have Jerk Chicken(Caribbean). Jerk Chicken cooked by almost 30 types of spices. They used to use pork, but this day they use chicken for some reason.

In central America we have burrito (made from tortila wheat), taco (made from corn tortila) and Ceviche (one night marinated fish with lemon to make it set). Arado and Emvada are from South America. Arado is a meat grilled with salt and pepper.

Now we move to europe. There are two most famous grain, wheat and rye. 3 most famous fat, lard, olive oil and butter. They also use a cow's blood to make black pudding.  Spannish churros also named as a spanish donut. Walk to Italian, sweets are tiramizu and nuttela. So for you who loves Nuttela say thanks to Italy hahaha..

Move again to Africa. Central of Africa has the most famous cuisine, Ndae (bitter vege) and Fufu (from a plant that contain flour. East of Africa has Kacumbari (from tomato and onion) and Mandazi (fried bread). Horn of Africa has Wat (Lamb or beef curry). North of Africa has Cocous (wheat), Sacoa (tomato soup) and Full Mades (from Egypt). South of Africa has rainbow cuisine because they are visited by many regions.

Then we go to Australia.
They have Pavlova (inspired by a beautiful balerina), kangaroo meat (authentic), vegemita (extract of yeast beer), meat pie and lamington (spongecake double layer).

Last but not list is Asia.
East of Asia has Chinese cuisine that is unique because of the speed during cooking is so fast. Central of Asia has Kazkhastan (most are made from horse's meat and lamb) and Garamasala (from India). West of Asia has Lebanon (milk).
