Dipping and Dressing Sauce



Do you know what’s the differences between  Dipping Sauce and Dressing Sauce? Well, today we’re gonna talk about the definition of sauce, type of sauce, the differences, etc. Here we start...

Sauce is a thicked liquid that is combined with spices. It’s to increase the value of nutrient, increase flavor, increase humidity and to make the food more beautiful.  There are 5 things to thinken your sauce: roux, Beuree Mennie, Cream and Flour, Flour, Blood and Bread Crumbs. Roux is made from cooked butter/margarine/vegetable oil/lard combined with flour. Beuree Mennie is similar to roux, but there’s no heat in the method of cooking. 

There are 3 groups of sauce from it’s: color, temperature, and ingredients. There are 2 types of sauces devided from its color: white sauce and brown sauce. Devided from its temperature: cold sauce and hot sauce. Devided from its ingredients: meat, oil and butter.

Brown Sauce 

or known as demiglace is made from the fried meat to get the brown color. It used to be cooked about 8-10hours with a low heat to make it glace. But now people make it more simple, it only takes about an hour to make the sauce. Here's the recipe: Quick Brown Sauce
Brown Sauce can be devided into Bordelaise Sauce, Robert Sauce, Mushroom Sauce and Diable Sauce.

Tomato Sauce 
is made from tomato puree, tomato paste and spices. It can be devided into Portugiese Sauce (tomato sauce + garlic), Spanish Sauce and Creole Sauce (tomato sauce + green pepper + thyme+ garlic +onion + celery). Recipe: tomato sauce recipe

French Dressing 
can be devided into English mustard Dressing (French Dressing + english mustard), French mustard Dressing(French Dressing + french mustard) and Miller Dressing. Recipe: dressing recipe

The main differences between dipping sauce and dressing sauce  is the consistency. Dipping Sauce is thicker, for example cheese sauce. Dressing Sauce is emulsion of oil and vinegar, it’s thinner. 

From the business point of view, i may make a shop that sells snacks and chips like potato chips, tortilla chips, etc. We also provides many sauces about 10-20 sauces. I may sell them as platter (for 2-3people/platter). One platter containing 2 types of snacks/chips and 5 types of sauce. The contain depends on what people chose.
